Rhubarb Custard Pie


I'm not sure why making Rhubarb Custard Pie makes me think of simpler times. Maybe because the recipe is from my Grammy Clemmer, a recipe that was likely handed down to her from her grandmother. Maybe it's because rhubarb isn't so much "in fashion" any longer. Nevertheless, I love it! This morning, I had my girlie help me put together our first (hopefully not our last) rhubarb custard pie of the season.

I NEVER make my own crust, but today I did. Hand over hand, rolling out the dough.

If you look closely, you can even see Bella got flour on her face, signs of a true baker!

You know, I've never really eaten rhubarb anything. I'll have to give this a try sometime. I know we used to have some at my old house that I lived at until I was 6, but I don't think we used it much.

Would you believe I have never eaten rhubarb anything!? How would you describe it's taste? And is it a fruit or vegetable?

I always hear Garrison Keiller singing in my head when anyone mentions rhubarb. :o)

I absolutely love rhubarb! We received three plants last year from a friend. They don't give us much yet, but I did make a rhubarb raspberry pie a couple of weeks ago. I am always hesitant to offer it to guests because most people are oblivious to such pleasures!
