Summer Meal Ideas
It seems at some point, everyone has a post like this. So, now it's my turn. I'm posting to ask for summer meal ideas. I would like to come up with a list of 20-30 meal ideas to rotate throughout the spring/summer seasons. To be considered a summer meal, it has to be cooked on the stovetop, in the microwave, slow cooker or on the grill...no oven made meals. If you have the time to spare, please post your favorite summer meal in my comment box or on your own blog and let me know it's there. After a week, I'll post my favorite summer meal for ya'll to enjoy.

I will try to post something soon. In the meantime, have you ever grilled asparagus? I never was a fan of asparagus until it was grilled and now I LOVE it.
Simply line the grill with some tin foil, wash and cut off about an inch of the hard bottom part of the asparagus, and spread on the foil. Then drizzle with olive oil and sprinkle with salt and pepper. Grill until lightly browned (I like them just a little crispy). You can also sprinkle with some parm cheese about 5 minutes until you're ready to remove them and wait until it melts before serving. So easy and delicious!
I just found a great cookbook called, Not Your Mother's Crockpot Cookbook by Beth Hensperger. It's got some great recipes. I think you would esp. like the Roasted Summer Vegetables.
I would say it'd probably have to be Grilled Carribbean Chicken Salad (or something like that...sorry I don't know for sure!) It can be made year round of course, cooking the chicken in the stove, but it's "meant" to be grilled and tastes best that way in my opinion. It's from a health cook book, too, so it's right up your alley! (You could skip the chicken since you're not a meat eater, but I think that's what makes it)I believe my mom's blogged about it, and probably even posted the recipe, but I'm not sure. Can't wait to hear your summer recipe...the last recipe we tried of yours has become a well loved one!
